Program Highlights:

  2. Hazard Analysis and Critical Control Points (HACCP): Understand safety protocols and best practices in a professional kitchen environment.
  3. Occupational Safety and Health: Prioritize safety while honing your pastry skills.
  4. Basic Preparations: Master the art of making delicate pasta choux, flaky puff pastry, and irresistible brioches. Create perfect pastry dough and explore whipped masses (butter-eggs and meringues). Dive into cooking techniques, basic creams, fillings, and decadent ganache.
  5. Regional Italian Pastries: Craft iconic treats like strudel, sbrisolona, and various crostate. Delve into beloved classics such as cassata, tiramisù, and babà. Explore the art of fruit chantilly and bake delicate delights like cantuccini, amaretti, and baci di dama. Discover fried favorites like cannolo siciliano, chiacchiere, and struffoli napoletani.
  6. Italian Breakfast Delights: Produce an array of morning treats, including maritozzo, sweet and savory focaccia, and the classic cornetto all’italiana.
  7. Artisanal Italian Ice Cream: Trace the history of gelato and learn the basics of crafting authentic Italian ice cream.
  8. Final Test: Showcase your newfound skills and knowledge.
  9. 2 On-site visits (pastry lab and Ice cream shop)

Practical Details

Duration: 8 weeks of in-school training.

Optional Internship: 

Extend your learning with up to 8-week internship at prestigious Milanese pastry shops. Please note that the curricular internship is optional.

Tuition: 

€ 10,500 (includes in-School training, Congusto's uniform, teaching material)

Schedule: 

Monday to Wednesday, 9:00 AM to 2:00 PM.

Admission criteria

  • Holders of diplomas from higher education high school diploma (hospitality school or
    equivalent is a plus)
  • Food enthusiasts or people already working in the field with at least one year of documented experience in hospitality industry
  • Eligibility to study in EU
  • 18 to 45 years old
  • Middle knowledge of English language

The Diploma* is awarded on successful completion of In-school-training.

*At the end of the in-school training students who attended at least 80% of the classes will be admitted to the final examination and will get the Diploma.
